How Do You Kill Your Fish?

After you catch them do you beat them in the head, stick them in the brain, or put them on ice and let them suffocate? I've been thinking about this lately because it seems they do feel pain. How much, I don't know. Also if you kill them quick they are supposed to taste better.

wahoo and dolphin gaff into box unless they slip off gaff then rag over head and eyes to sleep them then into box, blackfin tuna score gills and tail with knife headfirst into fresh salt water bucket to bleed then into box
bottom fish .. triggers, grouper, snapper, grunts etc unhook into box or floor depending on how bite is going off
oh yeah cobia hopefully straight into box
my daughter once asked me about guilt for killing a fish... until she saw all the little fish spewed out of the mouth of the fish she caught.. some looking relatively fresh and some partially digested...

Ikejime..so that's what thats called! I saw fish being dispatched this way on a west coast head boat vid and never could find out what tool they were using. They also call this 'spiking'. I believe the first shorter tool dispatches the fish.
It's the second longer wire that makes the fish shake. When I have seen it done properly, it's always been on tuna fish and the results are....the fish meat is in better shape.

Here's what I foundSevering the spinal cord: Cutting through the area known as the “throat latch,” under and between a fish’s gills, before bending the creature’s head back sharply to break its spine and sever the spinal cord, not only kills the catch quickly, but also allows it to thoroughly bleed out. Bleeding can be an important step in optimizing the food value of many species, especially blood-rich fish such as tuna and mackerel. However, while this method is certainly effective, especially with smaller fish, it can also be extremely messy and rather unpleasant to perform.
Iki jime brain spiking: Favored for centuries by Japanese fishers, the use of a sharp, metal spike to quickly pierce and destroy the brain of a fish is arguably the most effective and humane way of all to kill any catch. However, performing this task efficiently involves having a reasonably good idea of the fish’s physiology and being able to accurately locate its relatively small brain. The precise location varies between species and families of fish.
TIP: In a perfect world, the dispatch of a relatively large and active fish may involve a combination of all three techniques described here. First, administer a single, sharp blow to the top of the head to stun and immobilize the animal. Next, use a metal spike to pierce the brain and instantly kill the fish. Finally, cut through the throat latch and gill assembly area and allow the carcass to thoroughly bleed out (with sharks and some other species, complete removal of the head, tail, and major fins is recommended to speed up the bleeding-out process and remove any excess ammonia that may taint the flesh). The rapid application of these three methods should ensure that optimal eating qualities are retained in all fish caught.

- Pour or squirt a little alcohol directly into the fish's gills not your best malt, any old rot gut will do the trick. This will be absorbed almost instantly into the bloodstream and will rapidly cause brain-death. It's a clean and humane method.
