Default Blackfin Tuna and Skipjack recipes

Found my favorite Wahoo recipe on here, anybody have some good ones for Blackfin and Skipjack? Open to anything, even tuna salad. It's been in the freezer for about a week.

Cut out the meat, cut into serving sizes, olive oil, salt pepper and a pinch of cumin. Cook on a HOT grill, or even better fire, for no more than 1 minute per side (pink in the middle). Eat. Yum!

I smoke blackfin that I have frozen and make smoked fish dip with it, it comes out awesome and people love it. Mayo, sour cream, black and white pepper, Worcestershire, lemon or lime juice and garlic powder. It’s a feel thing I don’t measure anything, just sample as you go. Remember you can always add you can never take away.

I cut the bloodline out of skippys that I have bled and then boil it for quite a while. Let it cool, flake and mix with fresh minced celery and onion, elbow macaroni or bow ties, seasoned salt, seasoned pepper and mayo. Awesome tuna salad.

Cube 1/2 cup of Portuguese Sausage and 1/2 cup of Lap Xuong Sausage, brown in small skillet. Mix sausage with 1 cup mayonnaise and chopped green onion.

Place fish fillet on a bed of pre-cooked sticky rice and spread sausage/mayonnaise combo over the top. Bake covered for :45 at 350 degrees. For large fillets increase baking time to :60.

i have done the same 2 recipes with wahoo with good results but ultimately wahoo is the best sashimi style or in sushi

Personally I prefer to feed the skippies to other fish (snapper, grouper, marlin etc) and eat them instead. Cant quite get my head around that strong flavour.
