I could see those V Lock mounting bases working for this.

Stainless steel press in or screw on Tee nuts work good for mounting things to starboard.

Acrylic is a pain to work with, even drilling it takes special bits.
I'd make a template and rout the piece to shape. Cutting and sanding...

I'm not sure if the "holding power" would be any better. Taps are tapered so you would only get about 1/4" or so of full threads. Do they make a bottom tap for non through holes?

I'm not a big fan of windshields, even on nice days they get spotted with spray. Have you considered an Isenglass wrap instead. On mine, the front rolled down when I didn't want it.
