More than likely he's using an offset circle hook which acts tha same as a j hook
And it's a lot easier to find an offset circle hook in a tackle store than a standard one

Tamarindo and Carrillo are too far from the peninsula.
The GAMEFISHER and PERMIT are a couple of good boats that are based at Flamingo but fish further south in the winter months
