Default Will a simrad G07 connect to a 2003 yamaha 200 saltwater series II?

I have a Simrad G07 purchased new in 2016. Is it possible to connect it to
my 2003 Yamaha 200 saltwater series II (SX200TXRB). I'm guessing no but
thought I would ask anyway.

2006 is generally regarded as the make or break year for NMEA2000 and engine compatibility.

Saltwater series II is a 2 stroke. So No, it wont work. Need an efi engine that outputs NMEA2000 engine data.

The best you could do if you want fuel flow, mpg and other fuel related info is to get a Navico fuel flow in-line sensor, set up a simple NMEA2000 network, and connect the sensor and the Simrad to it.

The only 2 strokes that would output N2K were later model HPDIs. In your case, the OX66 won't send any data.
