Flush-mount, using "One-Way" screws:

is about as close as you're going to get.

Just let my kid put the screws in with a screw gun and they will be rounded so bad someone would have to drill the heads to get them out

Locking dashboard cover is one approach , though of course a crow bar would probably make an effective skeleton key.
Flush mount electronics are generally secured from the back , so unless you have yours mounted in a removable panel you could try to lock access to the dash back.

Don't. They will just destroy the dash getting them out. Make them removeable but flush mounted.

If someone comes to steal your electronics they going to get it regardless of how it's mounted and locked in your helm area. Sad but true.

Its sad but it is true if they want it theyll take it and often times they're people who know their way around some tools.
Use the rule that its gotta be tougher to take than the next guy but not so tough that if they do go for it they destroy everything you have to get it.
Or just follow the NYC rule cover what you have so noone knows toss a blanket or make up a canvas snap cover to go over it. Heck maybe make a decoy cover with something like JRC or APELCO on the front of it so your stuff looks old.
