pole/throw switch specifications

Default pole/throw switch specifications

Was trying to price replacement switches, and I'm a little stupid when it comes to "poles" and "throws"...

When do I want 1 or 2 poles, and when do I want 1 or 2 or 3 throws?

Also can I assume that most accessories I just want an on/off switch.
Is the nav/anchor switch an on/off/on switch?
I assume something like a horn is a monentary(on)/off switch?
What about a bilge where I want it to light up when its on (from the float switch) but also have a manual switch?

Any help is appreciated.
