Default Yamaha Temp and Fuel Guages

I have twin 250 four strokes built in July 2005, with the round guages. I have two questions. I know the guage has a light when it overheats.. but I want to know earlier than that, what the temperature is so I can see the overheat coming... I understand the engine does not come with a temp sender, but there is maybe an accessory... Is that correct...? is the wiring already there... I have a Garmin 4212...that can display, but I am asking if I need a separate sending sensor?

Also, on the fuel management, when I am at or near idel speed, the GPH fluctuates from .1 to 6.0 GPH, is that normal, Up-and-down, up-and-down, is the sensor getting stuck,? or maybe a function of too many fuel filters ...?
