I just replaced my old Standard Horizon eclipse with the new Standard Horizon Eclipse GX1400. It was a direct drop in size wise, but the old vhf had an external plug port in which I plugged in the Poly Planar MB-21. The new GX 1400 has a positive and negative wire for the external speaker so the poly planar MB-21 will no longer plug in. I need to keep the poly planar mb-21 because they are flush mounting into my e box. Can I cut off the plug on the poly planars and crimp?

Yes, solder it. What you want is a female RCA plug for soldering. Not the chassis mount but the kind that looks like a plug. The gold plated kind is a good idea. Then you just unplug it if you want to change the external speaker.
You also have to hardwire it to your gps or that external speaker will give you an annoying loud blast after 10 minutes.
