Help Converting Helm Storage Box to Electronics Box

I would like to upgrade my current chartplotter to a flush mount MFD with larger screen and additional functionality. To get that done I need to create a flat surface and have only one place that can be done. Standard electronics box offerings won't fit in the space but it looks like I should be able to convert what I have to a shallow box simply by adding a recessed area behind the door I already have, I'm not sure how to do it though.
How can I go from this:

To this:

I've never worked with starboard, plenty of woodworking experience though. Looking for advice on best way to create the recessed area with starboard, or whatever material is easy to work with and won't sag. One challenge the current opening presents is the slight radius it has from left to right side. If I use starboard, what's method of joinery should be used to build the box? The flat area will be roughly 16" across, will starboard sag with a 9" MFD and VHF radio mounted? TIA for any suggestions.
