I have googled and none look good at all. Let's hear yours....

Dry fish with paper towel, season with salt and pepper lemon juice. Smear housradish and mayo both sides refrigerate for at least an hour. Grill and enjoy. Don’t over cook

Dude.... I rinsed and dried the steaks, season salt on all sides and brushed melted butter. Unreal! Thanks!

My family has been grilling fish like this for years. With quality fish, I think simple ingredients are best. This is another marinade that I do with fish that I want to grill. 2 parts olive oil, 1 part soy sauce, and however much minced garlic you like. You can marinate as long as you like. I never leave it in over 30 minutes, awesome taste!

Salt and pepper steaks

Medium Heat

Little bit of olive oil in the pan.

Put the presentation side of the fish down on the pan once its hot.

Let it cook on that side until you get some nice browning after that flip the fish.

Add minced garlic to the pan

Squeeze 1/4 of a lemon onto each steak (Optional)

Add Capers with very very little Caper juice

Add a 1/4 stick of butter

Let everything reduce in the pan with the fish.

Once fish looks where is still is rare/ medium rare in the middle pull it from the pan. (It will still continue to cook)

Let pan with contents continue to reduce and add about 2-4oz of white wine to deglaze the pan. (You may need more depending on how big your pan is)

Once its reduced and deglazed spoon the sauce onto your fish.


Recipe works great with ono (aka Wahoo)
