Eggs, Dukes mayo and pimiento-stuffed olives. My wife makes it like this and I love it.

I can't find Dukes on the left coast but I have the internet.

Dukes is the best but I've been on and off a diet that won't let me have certain types of oil so I've been making my own. Takes about 5 minutes.: ! egg yolk, 2/3 cup of light olive oil, tablespoon white vinegar, tablespoon lemon juice, teaspoon salt and a pinch of pepper. Take stick blender(boat motor) and move up and down a few times. Very tasty and as healthy as mayo can possibly be.

A dab of Dijon mustard, white pepper, cayenne and a small dash of curry powder. If you can identify any of the ingredients in the egg salad or it's spicy hot, you used too much. A light hand with the spices is the way to go, up them on the next batch until you get what you want

great suggestions. I'm a Duke convert from Hellman's now that I can find it up here.
For my egg salad, I like celery, green onions, olives of some sort..usually green with pimento but kalamata are good too (cut back on salt if using olives.) I like fresh ground black pepper too. Red onion is great trade off for the green onions/scallions. A dab of dijon or worcestshire sauce never hurt anything.

I added dill and cayenne pepper to one batch, awesome. Another with some potato and olives, very good also and my next batch I think I will try some beans as another poster suggested. Really looking forward to trying them all and thanks again for all the tips boys, much appreciated. .
