Based on the interweb, I tried something new: Reverse searing. Cook it low and slow like a prime rib and then finish it (sear it) on high heat. Worked well.

Unfortunately, I cannot share the recipe on this. Wife’s friend owns a Brazilian butcher shop near us and he guards his marinade recipe with his life. I do know that there are some spices in there that are not available in North America. Sorry

Daughter was home the weekend so she made me Homemade biscuits with sausage gravy and some conecuh sausage. and some home made banana pudding. She's 19 and has been cooking since she was 7. Her momma raised her right.

Blocked the schedule today to catch up on chores and get some rest.

Hot & mild sausage, corn and a couple mahi sandwiches for lunch. Caught the mahi along with some yellowfin, tilefish and grouper this week while fishing two days out of Oregon Inlet. Sharks got 80% of the tuna we hooked.
