My version of a Taylor Ham, cured all night in the smoke box and ready to poach.

You "Joisey" boys know about Taylor Hams.

So we had already had several bottles of wine. Hostess brings out a great looking tenderloin from Costco and says to me: "do something w this"

Her house I had no idea what i was working with...

slathered yellow mustard and coated with rock salt brand dry rub( found in her spice drawer)

could only let it sit for 1-2hours


crappy off brand gas grill. So glad I have ceramic now!!!

could not get temp above 200!!! messed with valve, it was a new bottle, think burner orifices have spider webs in them or something.. ended up having to block back of grill with tin foil. finally got 400

finished in oven at 350 for 20 mins

There is without doubt some fine product being displayed here from time to time. At least one of the guys is a professional, whom I suspect would make it to the desert round if he was featured on "CHOPPED".

For our going away party. A friend cooked the brisket, pulled pork and collards and brought his portable green egg. We made the Bahamian mac & cheese and garlic slaw.
