Shrimp and Crab Salad

¾ lb Shrimp
1 lb Crab Meat
1 to 2 Mangos depending on size, peeled and diced
1 pint cherry tomatoes, cut in half
2 gloves garlic minced
3 Tbsp. fresh lemon or lime juice
3 Tbsp. cilantro, chopped
1 to 2 Avocados, diced
Salt and Pepper to Taste
Good quality olive oil to desired texture It does not take a lot.

Clean shrimp and boil until done. Or roast in a 350 oven. Do not over cook the shrimp.

Mix all ingredients except crab and avocados. Gently fold in crab and avocados. Taste and season according to taste.

Note: Scallops can be grilled and added as well.

Our daughter just puts this salad together without a lot of measuring and every time it is wonderful. It can be used as a first course, a warm weather entre, a buffet item, a nice lunch or just about any time.

for the admiral and I there is no better way to eat crabs than boiling them. I have someone who fishes them near me and we get them at least once a month.

Pick them and get the Old Bay crab cake mix. 1lb of meat, a cup of mayonnaise, and spice pack from old bay. Best cakes ever and super easy!

Yes I steamed them about 4-5 times and they just don't have the same seasoning as when you boil them. I know up northeast they pour seasoning on top of crabs on the table but I prefer seasoning the water and boil.

while alive - break claws off - set aside
use knife, go under belly and pry shell off
use vegetable brush and a little water (if needed) to brush out any remaining guts out of body
Use nut cracker to create a few cracks in claws

in pot- olive oil, fresh garlic, crushed red pepper- heat until garlic is brown

place crabs in pot (meat side down) , pour in beer- steam bodies(you can add Old Bay while they steam, if you like to)

remove bodies/ add claws and steam(might need more beer)

open several beers, get some people at table and eat!-

Yes they can be fried ! Clean crab as above post stated , coat in corn meal or favorite coating an fry. There almost like soft shells at this point.

ice down crabs 30 minutes before cooking, this prevents claws from separating from crab.

Add liquid crab boil. salt, red pepper lemons to water, bring to a boil add crabs, boil for 12 minutes cut fire and let soak for 10,

Steam crabs, who boils crabs???



Cream of Crab Soup 1 lb. crab meat (or more) 6 Tbsp. butter 2 small potatoes, peeled and diced 1 small onion, peeled and diced 2 tsp Old Bay (or more) If you buy crab meat you need more! I steam my own crabs with lots of Old Bay flavor in the meat 1 Tbsp dry mustard (or more) 4 Tbsp flour 1 tsp salt 1/4 tsp black pepper 4 cups half and half 2 cups milk 2 Tbsp sherry (or more) 2 tsp parsley flakes In heavy 3 quart saucepan melt butter. Add potato, onion, Old Bay and mustard. Cook over low heat until tender - stir constantly. Remove from heat. Add flour salt, pepper - blend well. Gradually add half and half and milk. Cook on low heat until thick - stirring occasionally. Add crab - cook for15 - 20 minutes. Stir in sherry and parsley just before serving.

Fillet a flounder. crab meat, chopped up cooked shrimp, Old Bay, cream cheese, mix up, put in between fillets then bake. Stuffed flounder, very good, did a doormat for Thanksgiving one year.

I know most think us Mid Atlantic people use Old Bay on crabs but we don't.

J.O. #2 seasoning and steam. Apply liberally before you steam.

Old Bay is for crab cakes.

1 stick of unsalted butter
1/2 cup each onion, bell-pepper, celery and parsley chopped fine
1/3 cup flour
1 can cream of mushroom soup
1 can cream of potato soup or a second can of cream of mushroom soup
1-2 cups corn "optional"
1 lb. shrimp
1lb. crab meat.
1 pint 1/2 & 1/2
approximately 4 cups whole milk.
1-2 tsp of liquid crab boil
seasoning to taste

melt butter and saute onion, bell pepper, celery and parsley for about 30 or more minutes. add flour, mix well then add mushroom and potato soup, 1/2 and 1/2, 2 cups whole milk, corn, crab boil and seasoning. Let cook over low fire for 1.5 to 2 hours, At any time it can be thinned with more whole milk. If you don't want potatoes add a second can of mushroom soup, if you want more potatoes boil a few and dice up and add 15 minutes before adding shrimp.

saute shrimp till not quite done then add to soup cook 5 minutes then add crab meat and cut fire. Let sit for 5-10 minutes before serving.

If thinner this can be eaten as soup, if thicker can be eaten over angle hair pasta.

I invented and made this recipe last night. The admiral wanted crab soup so I read 5-6 recipes and used ingredients from all of them. Next time I might add a cup little seafood stock

J.O. Is good stuff indeed, but it is also super salty! It has twice the salt of Old Bay and would ruin a good crab cake if used in proportion to Old Bay.

Routeed Crabs

Using live crabs, pull off the top shell. Remove the lungs, eyes and mouth. Sauté some yellow onions and garlic in butter until translucent. Add the cleaned crabs with some Tony Chacherie’s. Cook on medium fire for about 15 - 20 minutes. Add the sauce from the crab and onions over rice. Peel and eat the crabs. It is best to use crabs that have the yellow fat and eggs to give it the best flavor.

Crab dip
One stick of butter
8 ounces cream cheese
A pack of green onions, chopped
Tony Chachere‘s
Crab meat

in a medium-size pot or a crockpot melt the butter and cream cheese. Once melted add the green onions and Tony Chachere‘s and mix well. Fold in the crab meat. Serve with crackers.

Absolutely delicious. The ones we catch here have a sweet taste to the meat.
