Default Grilled Cheese Sandwich ideas?

We had grilled cheese sandwiches for supper tonight. We use American cheese to make them. What are other cheeses that you use on your grilled cheese sandwiches? Looking for new ideas.

A great grilled cheese sandwich starts with great bread. And I'm not talking "white bread" like my father called it.

I personally prefer Monterey Jack cheese, as the melting point is so low. My wife prefers Sharp Cheddar.

We have an electric griddle about 10" x 20", and it's a great way to cook'em. And with an 8 year old at home, we use it daily.

I like all combos of grilled cheese but my favorite is sharp cheddar, slice raw onion & spicy brown mustard on seeded rye.

Velveeta Cheese!
I put it together with lots of butter on the bread then microwave for about 20 seconds to get it started then place on hot pan to finish and brown.
I like to put some kind of lunch meat in one too, maybe mayo.

the best grilled cheese I ever had was at a diner few years ago, was gruyere and herb goat cheese on sour dough with pickled red onion, which I was never a fan of until that day, wow that was good! My lunch date had the same with sliced heirloom tomatoes and was way good

Gruyere, short rib or pot roast, and caramelized onion is a favorite.

If you have dehydrated habanero peppers (I do every year), sprinkle a little on to your taste. Compliments the butter and cheese nicely.

Dip it in A-1 sauce. Total game changer for a regular grilled cheese sandwich.

We really like the Sarah Lee Artisano bread, Kerry Gold butter, and this month it will be Kerry Gold Doubleliner cheese, The most important part for us is patience, for that is what it takes to get that nice even perfectly golden bread color. MMM MMM GOOD!

Use mayo (Dukes) instead of butter on the bread. Bacon and tomato are good things to add.

Just tried mayo instead of butter after reading this. Grilled cheese has been my favorite fast food forever and haven’t ever made one with mayo before. I kept it simple, thin sliced sourdough, American cheese and mayo. Delicious, two thumbs up!

If you’re making a grilled cheese with tomato soup, try using mozzarella cheese, and in the butter for the bread add fresh minced herbs (I prefer basil, oregano, and thyme), garlic and grated Parmesan cheese. The parmesan gets melted into the bread making a crispy cheese crust. I prefer to make the butter ahead of time to let the flavors combine some, but just the garlic and herbs, add the Parmesan while preparing the sandwiches.

I use "Colby Longhorn" cheese and change to differant breads often. Some times I sprinkle some grated parmeson cheese on the outside.
