Worth every penny and time spent.
We had Reubens tonight made with my homemade Pastrami. Out of this world, better than any restaurant ones I ever ate. They probably ended up costing more than a restaurant one and the pastrami was probably more than deli pastrami but worth every penny and time. Here is the video I used to make the pastrami....
The only change I made was for the final bake I used my gas grill as a smoker instead of the oven. Same time and temperature, just added smoke to the mix.
For the sandwiches I used a light Rye, Bavarian Sourkraut, and Havarti cheese. I didn't have Russian dressing so I used Thousand Island with a touch of Horseradish creme sauce. Buttered them up and on to the Georgey.

Awesome video, and awesome channel name from that dude, thanks for posting.

Katz's is on my list...I was literally just researching it two nights ago as the spousal unit and I may take a long weekend in NYC for our anniversary this year or next.

Wasn't sure if it was the real deal or a tourist trap but good to hear it straight from someone in the know.

That looks sooo good. Any options if you don't have an Insta pot thingy? Or do I hit Amazon.

I do most of my pastrami out of corned beef as well, easier and cheaper in the long run. You can smoke it on low low heat and itís unreal. Iíd say you lose close to a 1/3 of weight tho and it didnít look like near that much in that pot thingy

Mine will be delivered Monday, maybe I'll get lucky and get it tomorrow.

When you smoke it, do you just go by time or check the temp? Gonna have to try that way too.

Both, I have prehistoric grills, smokers etc but I like doing it that way. You can drink more beer smoking it

If you go to NY you have to go to Katz's. It has been too many years since I have been there, but many in my family go there regularly and none live in NY.

It is already cooked, so you don't have to worry about temperature. Setting the rub and smoking it are the main objectives.
I weighed mine before and after and it lost around 25% in weight.

We finished up the Pastrami last night and I noticed something I omitted in my OP. It wasn't plain Thousand Island dressing we used on the Ruben sandwiches, it was Thousand Island Dressing with BACON.

Best Buy had their brand 6 quart cooker on clearance for $30. Couldn't resist. Tried the recipe this weekend. Sliced hot pastrami last night during the first quarter. Unbelievably great. Just had slices dipped in stone ground mustard. Just wished I had a couple of slices of real marbled rye to make a sandwich. Maybe this "old bag" will walk by tonight....

They have one of, if not the best sandwiches in the world IMO. LOL just don't do what I did. You have to pay for your meal first thing in the door, or the last thing, I don't recall. I did and through the receipt in the garbage can, That is a big NO NO in Katz's. They have a big sign that instructs you keep receipt. I did not see it. They actually had an employee go through the garbage to find my receipt. I will never make that mistake again.

We've done it twice now, it's pretty good. Pretty easy, just rinse off the brisket really well, put it in the instapot for about an hour. When done, cover it with the spices, let it sit for a day or so wrapped in foil. Then enjoy

we do cheat a little bit and add some liquid smoke (as per the recipe). Maybe next time we will smoke the brisket first.

If you have a Walmart with a grocery store they have packaged corned beef brisket for like $3.99/lb. usually come in 3-5lb bags.
