Guaranteed you never had anything like this.
Hard boiled eggs in the instant pot take five minutes, these hard boiled eggs take two hours.
Pour two cups of water and two teaspoons of salt in your instant pot. Place as many room temperature eggs as you want in one layer on a trivet in the instant pot. Close steam valve and set time for two hours. When done, release steam valve and place eggs into an ice water bath to cool off. Peel eggs while still warm, cut in two and remove the yellows. The long pressure cooking in salted water will turn the egg white to a chestnut brown and give it a nutty flavor.
Place the yellows in a bowl and mash. Per six eggs, add two tsp of Gochujang (Korean chili paste) , two tsp of Dijon type mustard, one tblsp rice vinegar, and one tbsp mayonnaise. Mix the add back into the egg white cavity. Sprinkle with Sesame seeds and devour.
(The Gochujang can be substituted with Sriracha)

There is no way you will get any unusual odor from fixing this dish any more than the hundreds of thousands of the deviled egg dishes fixed around this country almost every day.
If you know how to use and maintain an instant pot you will not get any odors, no matter what you fix in it.

I will also say, the recipe for the filling sounds delicious and I will probably give it a go with just regular hard boiled eggs. Did I mention I love eggs? Lol

Nothing to do with geography, sorry to say. Experience mostly. I've overboiled eggs in my instant pot, once. I found the smell nauseating in my house and couldn't get it out of my gasket either For the record, I love eggs, regardless of how they're cooked. We even have our own flock so we never run out of them but maybe we have different eggs north of the Mason Dixon? lol

We have our own egg production also and I love eggs fixed in almost every way. I have never experienced any odor problems with this method.
I use the instant pot almost daily, and fix many exotic types of dishes and I have no odor problems with my gaskets. After washing up my IP after a spicy dish I always pour in a half cup of white vinegar, set the pot for two minutes and let it natural release. I then rinse the pot and lid and store the pot with the lid upside down on top of the IP. I have two 6 quart and an 8 quart IP and no odor problems.

I think he just made a mistake. It doesn't take 2 hours to do boiled eggs in the instapot. Actually, he said in 5 minutes in the second sentence of the post.

Not a mistake, regular boiled eggs take 5 minutes, these eggs take two hours. It is what makes them special. Look at the links I posted in post #5 it even has videos.
