Default Wet aging a pork butt

Ok so i bought a 17# pork butt to smoke this coming weekend, wife just told me she has to work,can you do it the following week. It is vacuum wrapped and says freeze or use by Aug 15. I have read some say wet age it and others say do not. What say you?

Wouldn't concern me to cook it 2-3 days after the use/freeze by date,
17 lbs is a big butt! Is is a whole shoulder?

I almost always try to cook my pork butts ahead of time and then pull them, put them in a pan and wrap them in foil and stick them in the fridge for a few days. Sometimes I even freeze it, it always tastes better after. I put one on my smoker before I went to bed last night and pulled it off today and don't plan to eat it until a party tomorrow night.
