Once.
You don't want to eat shellfish that does not open whilst just cooked.

I would find small pearls in mussels whilst harvesting them as a squid on a following tide.

I've never eaten that dish. Why don't you shuck the claims and just put the meat in it?

Itís because a lot of the flavor comes from the clam brine/juice that is released when they are steamed open. If you are into cooking a great book I read is Heat, by Bill Burford. He was a journalist that worked in a kitchen for a story and ended up becoming infatuated with Italian cooking and eventually became a chef. Anyway, his recipe is what I Use, super simple and Iíve never had a complaint.

Can't tell from your pic, did the big clam have the normal looking meat in it and attached to both sides with the smaller clams off to the side? Did the smaller clams have regular looking meat in them as well or were they just empty shells?

there was no meat in the big clam, just the two shells, one a bit bigger than the other. I didnít think to try and open the smaller ones so donít know what was in them. Are thy like cannibal clams?
