Default Blackened Mahi Mahi

So, how do you cook your Mahi Mahi...........Here's how I did it last night....

First thing is go to the store and buy a 12 pack of Rolling Rock (get it nice and cold) then invite hlights2 (Steve) (Fellow THT'r) over for drinks and a little social talk.

Have him bring the Tuna, Mahi-Mahi and Shrimp...........Once he arrives, start the grill while conversing over a cold brew.

Then put a 10 inch cast iron skillet on the grill to get another brew...send Steve into the kitchen to prepare the Tuna and Mahi-Mahi for the pan.

While I'm drinking a rather cold brew..............then the Shrimps are put out for an offering of Fellowship and social talking.....the Skillet is now hot-hot and Steve gets the fish in and stands over the hot-hot grill....he sure is a good host at my house....

Then appears the Admiral.....looking at Steve cooking the sitting watching and drinking another cold brew...........then she makes the following statement...."You invite him over for dinner and a couple of drinks and he's doing all the work" To her I reply " Yea, it's great ain't it....Honey can you get me another brew......Steve is making me thirsty cooking the fish.....Hey Steve you ready for another cold one.....

As always it was a real pleasure to have Steve Over...any time your in town, you will always have a place to grill.....I mean...........well, another beer yet.

When you think of the hundreds.........possibly thousands of men roaming the streets with fish under their arm, searching in vain for someplace to display their culinary expertice, he was lucky to find you when he did.
Not many people would open their home this way.

Tom - it was very enjoyable evening with you and Brenda - Good food, cold drinks, and good conversation with good people. It doesn't get any better then that!

I'll do the cooking anytime but I don't do dishes!
