Default Live The Dream (especially for Shag)

This one is from Winkler Bakery in Winston-Salem, NC. ( Note well, though: flour requirements may be variable. If you make these in the Tropics during Rainy Season, you should have 12 cups of flour handy. And you must make the mashed potatoes completely free of lumps.)


* 1/2 cup (1 stick) butter
* 1 cup sugar
* 1 cup hot, unseasoned mashed potatoes
* 1/2 cup milk
* 2 eggs, beaten
* 2 packages active dry yeast
* 2 tablespoons grated orange rind
* 2 tablespoons grated lemon rind
* 2 tablespoons orange juice
* 1 tablespoon lemon juice
* 1/4 teaspoon nutmeg
* 1/2 teaspoon ground mace
* About 2 cups (1 1/2 pounds) flour

In the large bowl of an electric mixer, cream butter and sugar; add potatoes, and mix well. To scald milk: Heat until just below boiling point and tiny bubbles form where milk meets the pan. Let cool to lukewarm. Add scalded milk, then eggs, to mixture and mix well. Dissolve yeast in 1/2 cup warm water; then add to mixture. Combine rinds, juices, nutmeg and mace; mix in. Stir in enough flour to make soft dough (you may not need it all). Knead on well-floured surface until smooth and elastic. Form into ball, place in greased bowl, cover with cloth and let rise in warm place until double in size. Punch down; let rise again 5 to 10 minutes.
Flouring hands well (dough will be sticky), form into small balls, about 3 ounces each. Place on cookie sheet. Slash tops with razor blade (to release air). Cover and let rise until double in size.
Bake at 350 degrees until golden brown, 15 to 20 minutes.
Makes 30 buns.

Thanks! One of the kids killed my starter a while back so I haven't been able to make sourdough.
