Default Vacation Holiday Celebrations Meals/Parties

The family and I are travelling to the NC coast again this year with about 7 other families... roughly 25 kids between 3 and 20... it is a great time. We all rent several homes - and we have a n annual tradition of "hosting" dinners to make it a little more cost effective on everyone and the kids all want to eat together anyway... We've done "Mardi Gras", "Cinco de Mayo", "Thanksgiving" all holiday themed nights and makes it really funny for the kids to get into the themed party.
Since the cooking resources are few - a regular stove/oven and a charcoal grill - does anyone have any ideas of a party to host? That would fun, creative and we could make it without breaking the bank..... I was thinking a luau - but not sure how I could cook a pig - or something like that... anyone have some ideas? - looking for some fresh ideas /takes on this idea/themes/holidays... thanks in advance

I do have a slow cooker we can bring...and I do have a turkey fryer pot/burner that we usually bring....

Frogmore stew. Get someone to stop at Nahunta pork center in Goldsboro and pick up some semi dry hot sausage. It is a lot like brats but a lot drier and much more tasty. Do the usual onions, corn on the cob, new potatoes, sausage, and shrimp. Just a thought.

Thank you Shag - I think I can swing by Nahunta on the way down - depending on the mood in the car after about 10hours.... Any other ideas are greatly appreciated!!
