Default King Mackerel

Well I caught my first King Wednesday and went looking for some good recipes and/or marinades to dress up the fish. Most everyone here (Charleston, SC area) told me that it was "gamey" or they just didn't like it. Then I went online and found some recipes for marinades and the comments at the bottom always involved sopping up the marinade with a biscuit and throwing the Mackerel out. Anyway, I was hesitant to even bother cooking the damn thing, but as it turns out, the haters don't know what the hell they are talking about!! After marinading the King for about 4-6 hours, I lit the grill, threw the filets on over indirect heat, added some mesquite wood chips and smoked that bad boy!! Freakin' finger lickin good!!

Just wondering why so many people piss on the King?? It was as good as any other fish I've had, fresh or saltwater. And better than most.

If I have to marinate a fish to make it taste good,I dont eat it. To many other fish out there you can filet and cook and it tastes good. Glad you enjoyed yours

Surely you try different seasonings or experiment with different flavors to change things up. I marinade lots of meats, with the exception of steak, so fish isn't a stretch.

Yup I experiment with seasonings,marinades changes the taste of what I should be tasting. I like my steakes to taste like a steak and my fish to taste like a flounder,dolphin,tuna,trout etc.. Just my opinion,glad you like them

Call down to the bonito boat house on Fripp Island and ask the chef for his King Mac recipe. He cuts it into small squares and fries it. Best I've ever ate.

They are pretty good in fried nuggets. Not a mahi but not to bad either.
