Default How long will fish keep at room temp?

When I bring fish home to eat my wife likes to take one and use it to make a fish rubbing (rub ink on the fish make it a big stamp). the problem is the fish has to be dry and she likes to make a few of them. so how long can a fish set at 85 degrees and still be good to eat?

When they start to smell "fishy" it is time to discard them. I don't think 10-15 minutes would do much but bacteria will start to grow rapidly. I try to air dry my filets for about 10 minutes before vacumn packing . Have not had a problem. I do not think after a couple of hours I would want to be eating them.

Since the refrigerator is also a dehumidifier, wouldn't it dry just as well if left unwrapped on a rack in the fridge?
