Default Beef Ribs

Any of You Guys cook any Beef Ribs? Around My area Baby Backs[Pork] are impossible to find! Lucked out a few weeks ago and a Store had 1 pack..So I got some Short Beef Ribs this time and wonder how You Guys cook them to be tender. I do have a Sous Vide,Crock Pot ,Charcoal Grille and a Gas Grille.

I cook them frequently on my offset stick burner. 50/50 coarse salt and cracked pepper, 275℉-300℉ indirect heat until internal temp is around 200℉.

The classic short rib recipes involve slow braising and the sauce of your choice. Typically that ends up being 3 hours or so in the oven in a dutch oven type pot.

Laid out in rows in a pan with 1/2" of water or so, seasoned lightly with salt, pepper and Accent, cover with foil and baked 225-250 for 3-4 hours while adding water as necessary to keep from running dry. If sauce is desired, cook separately in a pot while ribs are on then just dip the ribs in sauce before serving.

Well, just figured out what I'm doing for dinner!

Cook them the same as pork ribs. I make a tray out of heavy duty foil, hit them with some rub, poor a beer in the foil tray and seal the top with foil. Then slow cook/steam on grill for a hour or so. Then I take them out of the foil, sauce them up and brown them on the grill about medium high to high.

Cooler,

Kosher Salt, Course Black Pepper.
Remove the membrane on the back side first
Apply a liberal amount of KS and CBP all over the racks

Smoker set at 250F, smoke for 4 hours bone side down, at that point pull and wrap in pink butcher paper (NOT FOIL) return to the smoker for another 3 to 4 hours.

Allow to rest for 30 mins and get ready for your tongue to slap your face trying to get the juices off of it!!!

Easy way: bake in oven 200deg for 2-4 hours covered with foil. Season and add water to tray before. Cool till 90% done. Take out and cut to individual ribs. Then grill till your liking.

I usually smoke them, but recently did some for 48 hours in the Sous Vide at 140*, then finished on the grill, and they came out amazing.

Bone in Short ribs already cut individually I like to smoke them until I get the color I want then throw them in a covered foil pan with red wine, beef broth butter rosemary and thyme. Let them cook until tender. Serve over mashed potatoes or creamy polenta. You got something there.

beef plate/chuck ribs are smoked at 275ish with 50/50 blend coarse salt and pepper until probe tender. No wrap. Brisket on a stick
