Thinking about heading to Belize Sunday after Christmas. Will be staying at Coco beach resort daughter and son in law will be diving, wife and I will be watching granddaughters those days. But would like to go fishing a day or two. Any recommendations?

We did an overnight dive trip to the Blue Hole 25 years ago . Looks like there is ALOT more on that island than there used to be. It was pretty sparse back then if I recall correctly.

7 days on ambergris cay , 6 days snorkeling
pix of 60# black grouper, 20# mutton’s, schools of 3-5 # yellowtail, that was 24 years ago

Been there many times. Thinking about relocating to Placencia.
San Pedro Town can be busy by Belize standards. Buy the fruit there. It is great. Rent a golf cart and go to Secret Beach and Truck Stop. See Shaggy at Pirates Treasure if you like a strong drink.
The best guy and tour guide in the country is Rafa. We went zip lining, cave tubing, to the Belize Zoo, Tikal, etc... with him. You can contact him on WhatsApp at 501-626-5138

Speaking of strong drinks, catch the water taxi to Caye Caulker and go drink lizard juice at the Lazy Lizard at the split. My favorite bar in the world.
I can give you the name and number of an American guide on Caye Caulker but can't help with San Pedro. He owns the hotel next to the split. Ambergris Caye is the bonefish capital of Belize. You'll see them up against the seawall walking down the street.

I went to Hopkins Christmas last year really enjoyed it easy rental car ride from the main airport the main roads are astonishingly smooth and flat for Central America. If you rent a car download Google Maps before you come and when you get in the car get on google Maps set your destination and make sure it calculates your trip and starts, WHEN you lose cell service the GPS will still function no problem as long as you start the drive on data.
OP Ambergris Cay is the more developed more US touristy Island area I googled your hotel and I believe that is where you are going it is a little North of Belize City and requires some type of ferry etc to get there. Placencia is down to the South about 3:15 from the Belize City Airport, Hopkins was 2:15 hours South.
We went for 11 days or so stayed at the Jaguar Reef and really enjoyed it, for a Belize Resort I would say it's as nice as you can find and reasonably priced, the town of Hopkins was a quite safe place. There is not much info on Belize that I could find last year so my only regret was this: If you plan to be in the country over a week I would recommend that you split the trip do 2-3 or 4 days in the Mountains and the rest at the beach. A few of the families that I met at our resort did this and it is what I would have done. There are some really interesting things to see in the mountains that take a bit to get to so if you stay 2 days or so you can see a lot of it, do your hiking, tubing, site seeing etc then stay on the beach.
Covid is going to throw a wrench into a lot of things
If your wife is into culture one of the most famous Myan Ruins is just over the boarder into Guatemala I would not recommend self guided tour there hire a guide to do it.
This is still in Belize hard to drive to.
Diving and snorkeling were great fishing was hit or miss you have to find someone that will take you all the way to deep water non of the locals want to burn the fuel to get you there. I would go back in 10 seconds

I spent 10 days in Ambergris Cay & island hopped a bit with a group of 7 friends. One of the most friendly countries I've ever been to. Your dollar goes a LONG way. I was there in June and the Mahi bite was fantastic. Definitely travel in groups though, there are some shenanigans down there like anywhere else.

choose carefully for your tour/watersports/boating provider. a few are poorly equipped and poorly trained in "water activity" safety compared to what you might expect, based on our visit about 8 years ago

We'll be there in February 2022 for one day on a cruise ship. We've been to many islands on ships, but this is our first time to Belize. We usually do the Southern and Eastern Caribbean Islands.

OP, did you end up going? We are looking at going at the end of Feb. I’m curious how things are there with the Wuhan. Is everything shut down or are there still things to do? I’m talking night life, restaurants, etc.

Been to Placencia twice and got married there. Awesome village with very nice people. Stayed at Chabil Mar Villas both times. Caribbean and English is first language. Hard not to like.
Belize City is a dicey place though.

Secret Beach & Truck Stop are both fun.
Don’t skimp on transportation to & from, definitely worth flying into San Pedro. The water shuttle was hot, crowded and the one part of our group took over broke down. We flew back.
