I think the point is to take what you can use and use what you take. As far as Micky D's fillet of fish, I may have to pass.

All of McD's fish comes from Alaskan Factory Trawlers where the fish are caught, processed, branded, labeled and frozen on board. Once at the dock, they are shipped off as finished product

Another poster mentioned spiny dogfish as the new fish and chips overseas, this has been the staple for decades as cod got too expensive

I had an expensive skate dinner in la Jolla CA years ago. It was very good.

I tried cownose ray several years ago and didn't like it. It was a very strange texture. I don't recall that it tasted bad, just an unusual texture.
