Okay, enough already. My annual trip to Harper's isn't until the 19th of October this year. So just keep tossing them back.

You gotta blead them right away then put on ice. You can spike the brain also that will help calm them down.

I'm sorry but id rather pay for someone else to cook some local flounder rather than go through that to eat some cruddy Albie.

I like them seared in a little hot sesame oil on both sides with wasabi and soy sauce. Cook about med rare....good stuff.

Most folks just don't take the time and care to properly process these fish. All of that starts as soon as you get your hands on the leader.
When dispatched immediately, bled and ice slurried to drop the core body temperature, and loined out they taste great.
We never really fully cook them, mostly sashimi (while on the boat) and lightly seared and rare when on land.
