Which is the better unit ? any pros / cons between the two units

The Evo is better but if it's worth the big jump in money is up to you.

I like having a few real buttons/knobs. They are easier to use when its rough.

I have always owned garmin. My new boat has 12” evo 3’s and I absolutely love them. Best mfd I have owned so far.

Hugely agree with that. The touch screen is nice but the alternate buttons & knobs makes it soooo much easier to correct bad touches in many cases and perform some other functions. I have 2 NSS E2's below and 1 Go ESE in the tower where the same model size NSS just would not fit by a scosh or I would have chosen another NSS for up there in a heartbeat.
