I always shoot wildlife in Tv (time value) mode which you choose the shutter speed and the camera chooses the aperture. I'm not sure what Nikon calls it.

A lot of lenses don't perform their best at wide open so stopping down can help too but again you need better lighting to stop down - shooting at f8 instead of f5.6.

Getting closer always helps too. I'm under 10' from that raccoon. A lot of the deer pictures I'm 10-20'.
It's been a while since I used a D7000, but might look to see if you can do this. Like Mako was saying in Nikon Lingo it's "S" or speed priority. See if your D7000 has Auto ISO, if so i will set "S" and shutter to what mako said, aperture to f5.6 or so and then Auto ISO. The camera determines what ISO is needed to a good exposure. You may also be able to limit how high the ISO can go to. With my D850 I set the ISO high limit to 1600, when using it this way.

There's a gator in the 1st pic and I thought there was one coming out of the left culvert in the second, but I could be wrong looking at it. I took this back in like 2013 and can't figure out why I would randomly take a pic if there wasn't wildlife in it.
