you're using the knife incorrectly if its dulling the blade. insert the tip into the skin and cut from the inside out to separate the fillet from the carcass, similar as to how you would skin a deer.

Also for general fish filleting consider using a 8" butcher knife with a semi rounded tip. I find them faster to use than a fillet knife and also safer.
