I had a 2120SC Parker for 7 years and now in my 5th season with my 2015 2520 XLD. I can tell you that the resale value will be a lot more than a C Hawk. A 2 hour run on a 2820 with twin 300's is a piece of cake. The available fishing room on a 2820 will blow away an Albemarle or Carolina, and those will be inboards and require more maintenance. Correct Craft purchased Parker earlier this year so not sure if there is any changes in quality /construction going forward. There is no perfect boat, everything is compromises. A new boat will get you 5 years warranty on engines which is something to think about. Look around, do sea trials and make a sound decision.
