After reading this is sounds like the big deep V CC's like Contender or Regulator. Someone mentioned the Kencraft 235, that has over 20 degrees of deadrise in the stern. I think Sailfish are variable deadrise hull with 20+ degrees at the stern as well. All great options since you mostly troll. If you anchored or drifted or did more LTJ you might want something with a little flatter stern to minimize roll when stopped. Since you troll mostly it does not sound like maneuvering in shallow water is of importance to you so a lot of deadrise is okay.
