Try marinating black cod fillets in a miso paste mixture. Adjust this to taste so that sweet and salty are balanced: 1 part Mirin, 1 part cooking sake, 3/4 part white miso paste (other miso's are too strong), and 1/2 part sugar. Marinate overnight, scrape off excess, broil 5-6 minutes watching carefully for burning. Try googling Black cod miso marinade or Nobu's black cod.
