I just finished a meal I thought I would share with the fellas. I took a couple of Snow Geese at the club the other day. Tonight I cooked the breasts up. The birds up here are rice fed so.......yummy
4 Breasts (well bled!) marinated in sea salt, oregano, paprika and basil....2 days
Wrapped 2 pcs. bacon and pinned with toothpicks, each breast.
Seared on high flame (grill) for 3 min each side.
Reduced to low/med for approx. 15 min.
Internal temp at 140........pull 'em. (Rare to Med Rare)
Let rest for 10 min. Served with Risotto, Lemon Asparagus and Bread.
