225 vs. 250 yam 4 stroke , fuel usage

buying first 4 stroke for my 25' c-hawk. had 200 optimax as last motor, will 225 yam make big difference in speed + fuel usage? for 1000$ more i can get 250 yam 4 , is it worth it? would there be difference in fuel usage between 225 +250? maybe a dumb question! dumb swede on vinyard not pulling skiers want giants pulling me!
