Default Which Dexter Russell knife?

Hi,
I would like to buy a Dexter Russell knife and am looking for advice on which model to buy. I will be using it to clean red fish. Not bull reds but fish in the 20" to 28" range.

Which model would you recommend?

Dexter's are good knifes. Make sure you get a good sharpener too. Specially if you are cleaning alot of reds. I usually just half shell the reds that I catch, I bought a seraded knife just for reds.

I own 3 dexter russell knives:

9 inch filet for specks
6 inch boning for cutting belly bones out of all filets
8 inch serrated for redfish, black drum, sheepshead, tuna and other big, tough fish

Redfish have heavy bones. The 9 inch filet is a delicate knife. The smaller reds are probably OK for the 9 inch filet, but anything 25 inches or bigger I would use a serrated blade.

I love my dester russell knives.

Forschner 40547 is the wavy edge I like, I also have a


Dexter SG142-8TE (8" Tiger Edge) Very aggressive, zips through bones.


For offset blade, I like



Looks silly, but the offset makes it work and gives flex

this is the one, either 7 or 8 inch. you do not want a scolloped or serrated knife for redfish. you will waste alot of meat and make a mess of the fish. keep it sharp as hell and it will walk right through um.

Dexter SG142-8TE (8" Tiger Edge) is the one I use for redfish.

Dexter SG133-8 is the one I was calling a 9-inch filet ... awesome for specks.


S136N is the one I call a boning knife ... the blade is sturdier than the blade on the filet

Get a sheath for the knife, too.

The 8 inch serrated all the way for redfish. We clean tons of fish from tuna to wahoo to red snapper with these and they are absolute machines

For smaller redfish, sheepshead and other tough fish a serrated to get through the ribs and a filet to remove the skin works well. A sharp breaking knife like the one pictured can pull double duty. Breaking knives work fantastically on larger fish like cobia and AJ.

I use two knives on redfish. The 8" tiger edge to make the initial cuts through the scales and the 8" filet to remove the meat.

The new Dexter V-Lo's are pretty sweet....the 9 inch scalloped utility slicer and 8 inch filet knife are awesome for just about anything you can throw at em!

Default Thanks for the advice

I have decided to order the SG142-8TE. So now I need advice on a sharpener for this blade. Since it is serrated, I don't have a sharpener that will work.

What do you guys use for this type of blade.

When my serrated Dexters wear out I chunk em. I don't know anyone that sharpens serrated blade knives. It can be done though.

I love my Dexters. And I do sharpen the serrated model. Don't leave them in the boat. After each use wash them in warm, soapy water. Sharpen them with a quality whetstone lubed with honing oil. Wipe them clean. They'll last forever!

Just wanted to throw in for anyone in the MA/CT area that the Dexter Russell "outlet" is open at the Southbridge, MA factory wednesday evenings and saturday mornings. GREAT prices on a HUGE variety of GREAT knives. Outlet pricing on almost every knife they make.

They are not always open should the Wed. / Sat. fall on or around a holiday, so it's always best to call. Great trip and def. reccomended.

The Chefs Choice electric knife sharpener will sharpen serrated blades - I use it on my Dexter SG142-8TE. The instructions say to only use the fine setting. Seems to work fine.

I run them up and down, not across, a round steel. Seems to work pretty good. If they are really bad I lightly use a small round file first like for a chainsaw blade.
