I've always gone with a firm grip around/just in front of the caudal (rear) fin, and a light cradle under the belly. Move forward and backward gently to push water through the gills. When the dorsal perks up they are gaining strength and almost ready to go. I usually try to hold on until they slip out and then I know they are strong enough.

doesnt forcing water backwards over the gills basically drown the fish? i was always taught to hold it by the tail and move fish side to side in swimming motion to stimulate fish to swim and breathe
