I would look at the Finest Kind boats. They have a Whiticar and a Willis for charter with a crew that is well known for their sailfishing ability. It might be a charter where you could learn alot. Good Luck
Try Capt. Charlie Burns on the Infinity. I went out with him a couple days after Christmas. The fishing was not good, but he and the deckhand worked their tails off to give us the best opportunity possible. He and the deckhand (female) are very personable and knowledgable. They will let you participate as much as you would like and will teach you as much as they have time to teach. Don't let the idea of a female deckhand bother you either. She could hang with any of the best guys. She deckhands out of Hatteras in the summer and Stuart in the winter. I believe she even deckhanded the winning boat of the Big Rock tournament a few years ago. I know Charlie has quite a few tournament wins under his belt too. http://www.infinitysportfishing.com
Personally went out with Capt Pete on My Other Honey. Great fishing and everyone was calling him on the radio asking where to go. That tells ya something.
