Two recipies: One for frying, one for the grill!
Fried:
Ingredients:
2-4 snapper fillets
salt & pepper
1-2 beaten eggs (depending on the number of fillets)
Progresso Italian Bread crumbs
Vegtable Oil
Dry off the fillets with a paper towel and sprinkle with S&P. Drop fillets in egg mix, then cover with bread crumbs. Heat oil in a cast iron skillet on medium heat and when hot (check by sprinkling water -- when it immediately sizziles, it's hot enough) gently put in skillet. Cook for 4 minutes and turn. Once cooked, place on a clean paper towel to drain off excess oil and enjoy.
Grill:
Ingredients:
2-4 snapper fillets
Char-Grill seasoning (I use Everglades Heat)
salt & pepper
Garlic P
Soy Sauce
Lemmon Pepper
Lime Slices
Cut 2 slits across snapper on both sides. Sprinkle one side liberally with soy sauce, salt, pepper, char-gill seasoning, lemon pepper and garlic powder. Place 2 or 3 lime slices over fish. Place fish, season side down, on the grill. Season otehr side of fish as this side is cooking. Cook 7-8 minutes per side depending on your grill. Do NOT cook on high heat as the fish will dry out and only be good for feeding your in-laws
