would 3 a6s or 2 a12s be a better setup for a 31 contender?

I have a Rampage 30 and I went with 3 A6's and they are great! Less expensive also.....That is my suggestion

I have a 32 Intrepid and went with 3 A12 Pro's and it looks great. I think you will be happy with at least A12's.

here is a pic of my transom, i could probably get two a6s on there, one on each side of the motors and one in between the motors, or i could get two a12s on each side of the motors,
which setup do you guys think would have be best light distribution ?

I think a boat your size would be best with three A12's. Both sides (by the trim tabs) and the middle on the engine bracket. Make sure they are at the lowest point (the depper the better).. I'll take some pictures and post them. You have a very similar layout to my boat.

on a few contenders that i have installed underwater lights on i have noticed the large center stringer that is in between both motors...check this...it makes for a near impossible center light installation...either way, you will love the lights

I have 3 1520's on my 31 Contender. 1 on the outside of each motor right above the trim tab and 1 down the center. I found the props block some of the light from the outside lights.
