I'm thinking of putting an E80, DMS300 raystar 125, 2KW radome, high speed transom mount transducerand and a pair of icom 422's on my new Robalo any thing I'm missing or should think of upgrading?

Well your radar overlay will work as you have it but it will work much better if you get a heading sensor. The two most popular options are the KVH Autocomp 1000 and the Raymarine Smart Heading Sensor. You might also get the Raymarine NMEA multiplexer which will help with interfacing the radios and display. Of course you will need a chart too and you might consider a 5" tower to raise up the radar a bit. You are going to love that E80!
