Default Wire quality?

Long story short..

Rear of the boat was submersed for about 12 hours and fried all of my batteries. You can see the corrosion on the terminals and positive connectors. My question is: Visually the wires look fine, if I just cut them back a few inches and use new connecters will I be all right? Or is there something I am missing??

No, cutting back will not help. You should replace all wire that was submerged, even just one end.

Once the water gets in the open end, the capillary action will wick it many feet into the wire. Corrosion will be constant because it won't dry out and 6 months from now, you will wonder why something is not working even though the wiring looks great. But pull on one of those cables and you will find it is only the insulation holding it together.
