Default Dexter Russell Knives

Anybody know the type of knives the charter guys use in Venice? All that I've found online are the narrow filet type.

yep...only on the really bigguns sometimes i'll have to use a serrated blade to get started thru the scales
mostly though i don't have that opportunity very often!

The knife of choice is the serrated Dexter Russel for cleaning everything from swords to catfish. Or when you can't find them Academy sells a knockoff which also works very well.

Nice to hear that I'm not the only one using real knives. Dexter knives are used by the old fish mongers all over the country. A little trick I use is a 10' scoliped edge slicer to skin my fillets. Most food service supply companys have them in stock and will sell to you. I'm not sure about Hub city but there is a shop in the Intreplex in Gulfport.

For what it's worth. From a retired meat cutter of 20 years, I would suggest going with a Forshner brand Victorianox knife. Dexter makes a good knife, no doubt. Forshner makes all the same styles that Dexter does as far as I know, but the metal on the Dexter is a little softer and won't hold an edge as long. They are available in the same type of easy to hang onto handle only its black instead of white, or you can get them with wodden handles as well. As I said, for what it's worth....
