Default cajun microwave plans

Does anyone have the info to build one of these.....my boss is wanting to build one and i cant exactly remember how the ones i have seen was built....i just know they cook some FINE food!

Bluffman, unless you want a custom cajun micro you can google la caja china. I have used the caja china many many times for pig roasts on the Coast Guard base. You can usually fit a 75# +/- pig in the box and the great thing is it comes with all the trays and racks that you will need. However, they are expensive. I think 300 - 400 dollars.

thanks.the one im reffering to is a wooden box lined with a sheet metal type material and a wooden lid with metal on top for the fire to sit on.....it couldnt have cost more than a 100.00 to build.......(or so i assume)

The ones i have seen were 3/4" plywood box with sheet metal. There is a guy in Pearl River who builds them for cheap. I will ask around.

make ur box 48x28x28 have the top come to 36 inches line it with sheet aluiminum dont use tin as it is not safe for some foods . make ur pan for the lid 36x24x4 if u make ur top pan out of stailess u wont have to worrie about the bottom rusting and getting on ur food .should cook ur pig in about 5 hrs.ps. make a grill for the top of ur pan and cook burgers while ur cooking ur pig

Bluffman, that cajachina box is completely lined with sheet metal, the top is a light guage sheet metal with a "screen" on top of that so you can take the charchols off to check the pig. If you want to build one, I would just go by those specs and get a sheetmetal guy to bend you some peices to cover the wood. Keep in mind there will be plenty of juice on the bottom of the box when done so make sure the plywood cant get saturated through the sheet metal seams....that could stink after a while.

Default First Pig

I am assuming you are trying to cook a pig. If not, please disregard. If so, this sounds like your first attempt at "Coshon d' lait". If at all posssible try to have somebody who has cooked a pig before on your cooking staff. Their advice on all the little things can make cooking the pig easy. I only point this out because you said this was for your Boss.
For us, a cajun micro has always been cinder blocks built up 3ft with a supported steel grate at midpoint. Put an old tin roof ( new ones can have chemical on them ) on top and give yourself ability to add coals without dissasembling the contraption. Total interior square foot should be around 3' x 6' depending on pig size and other stuff you want on cooker. Total construction cost under a $100.00. There are alot of examples on the internet. IMHO Done right, it is one of the greatest BBQ parties.
