Default Vegetables

Wife says we have to have a vegetable with dinner, I would eat only proteins but I don't fight that battle just cook a vegetable. Problem is we're stuck on the same 3 or 4 things and it's getting old. Right now we alternate:

Roasted Brussels sometimes tossed in bacon jam
Steamed broccoli sometimes with cheddar
Grilled asparagus marinated in steakhouse marinade overnight
Sometimes do a stir fry

Need some new options but they gotta be tasty!

sweet potatoes, kale, collards, roasted carrots with honey, arugula salad.... dang, I love veggies.

Copper Pennies (a Carrot salad), Steamed Cabbage, Mashed Cauliflower (Cauliflower mashed potatoes) your mentioned Brussel Sprouts but fry some Bacon and actually steam them only in the grease and add back the crispy bacon at the end. .

Broccoli salad, cold.
Make the same dressing as for cole slaw , you can add any or all
of the following:
grated cheese
chopped walnuts
craisens
bacon bits
sunflower seeds
garbanzo beans
.

Go to a grocery store that has a big deli section and see what they do with veggies, good
place to get new ideas.

Sweet potatoes, salad - kale, spinach, corn, other potatoes. My wife likes veggie soup, spagetti zucchini, cooked cabbage, steamed -cabbage- carrots- zucchini- squash- potatoes- sausage. Okra, many types of bean.

Edamame, avocado (grilled or raw), sauteed mushrooms, green bean casserole... my favorite is probably grilled avocado covered in mango salsa.

To add to the many good suggestions above, sweet corn, fresh tomatoes with basil, eggplant parmesan or in ratatouille, grilled vegetable medley, fall squash of any kind and, one of my big favorites, parsnips cooked in maple syrup or pureed with garlic.

Don't overlook uncooked mixed vegetables with some fresh herbs. Tomato and cucumber with some fresh chopped parsley, some baby kale, oregano, a little fresh mozzarella, salt, pepper, olive oil maybe a little vinegar. Let sit at room temp for half hour.

Bitters with sweets works well ( endive, chicory some fresh apple slices and mixed greens.

Purple top turnip, parsnips mad anise gently simmered in chicken stock or finished with beef stock from a roast.

Vegetable based dinner like zucchini Parmesan is excellent. Even eggplant.

I love vegetables. Hydroponics and grow lights in the winter and a summer garden with filling in from the market.

Roasted new potatoes, dice and put in zip lock bag then drizzle some Evo and a pack of Lipton onion soup mix. Shake back to evenly coat and bake 35-45 min at 375 can also work with a pack of ranch dressing.

Sauteed zucchini, yellow squash, onion and fresh garlic or cavenders.

Sweet potato casserole. It can be you're veggie and dessert at the same time 😅

Pizza with green peppers, onions, hot banana peppers, and mushrooms

Add pepperoni and sausage and you've got each food group covered.

Cut into slices a yellow squash, a zucchini, some little red potatoes, some red and green peppers, some red and yellow onions, broccoli, asparagus and anything else you like. Drop them in a big bowl, pour Italian dressing like robusto over it and mix. Dump them in a deep pan, cover with foil and bake at 400 for 1 hour. Then take the foil off and cook until brown. If you don't like vegetables after eating them, you never will. Corn on the cob with melted butter mixed with rosemary and garlic. These are my favorites.
