Default Coconut Shrimp

The best shrimp I’ve ever tasted is so easy to make!

I think it would work with fish nuggets like catfish or anything in that texture too.

1 bag ready to cook shrimp

1 bag of sweetened shredded coconut

flour

water

Mix some flour with water till a pancake batter texture.

Add a little salt and pepper to the batter, roll raw shrimp in batter then roll in coconut.

Brown till golden in vegetable oil.

Eat

Ain't they good? You can also use an eggwash in lieu of the flour mixture. Try some lobster chunks sometime.

Thanks for the idea, and good timing too. I am going to trying shrimping for the first time this year. We just picked up the pots and accessories this week. I hope to have some pictures of the results in the next couple of weeks (shrimping season opens April 1st). Wish me luck.

Finally a recipe for Coconut Shrimp... I remember Bubba mentioning Coconut Shrimp to Forest while they were scrubbing the floors... But I hadn't ever found one. There are about 999 other ways to cook shrimp... At least thats what Bubba told Forest.

Really though.. Sounds like a good recipe. You could delve into a South Louisiana Cook book and spice up the batter with a few extra ingredients. But the basics are there. Frying shrimp is sometimes very tricky. Takes a little practice.

If anyone is venturing to Hilton Head Island try the coconut lobster chunks at Marleys. Not sure about slapping my momma but you'd draw back a bloody nub if you tried to take one off my plate.

Coconut Shrimp do Rule Dont they. This may sound strange but try diping them in Orange Marmalade before your through them down the hatch. MMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMM MAN now that WILL make you slap your moma!!

The trick to the shrimp cooking is in this order!!!

1. Peel all but last section and tail
2. Split body
3. Roll in flour/cornmeal/S&P mix
4. dip egg wash
5. roll in coconut flakes
6. Fry @ 375* peanut oil

""If you don't do it in this order the coconut will not stick and all come off in your fryer"""
50% horseradish & 50% Orange Marmalade is a good dipping sause!!
After this meal and a couple of beers your whole family will be slapin each other
