Head comes off to pack body with ice, fish is sold minus head and tail ( also know as dress weight)

Not to be nosey, but what would a fish like that go for $$$. What determines the price? Also, never knew the body minus the head and tail was the dress weight. Guess you learn something everyday. And yes that is a beautiful catch you got there. Congrats

What is the fish prep procedure for selling a catch like that? Are recreational schmucks like me allowed to sell a big tuna?

No, recreational schmucks like us are not allow to sell big tuna. You need a commercial permit from NMFS (with all the "then current" restrictions):

As for prep procedure, this is the most comprehensive article I have found on the subject. I don't do all of this. But it is what the big time shushi buyers are looking for:

I fought a 700lber for 2 hours in December. Pulled the hooks boat side w/ 65# of drag. I was HUMBLED! That's all I cna say. Humbled.
