I don't know what you have in mind in terms of price (you can always buy a new hull, and have the motor rigged), but I have noticed that Eckerd College gets some donated boats that they sell without power. They currently have a 21 foot wellcraft coastal (walkaround) for $2500 that might be a nice match for that particular motor if you weren't married to a center console.

What ever she does, be very careful to make sure she finds a hull with good transom integrity. It's a red flag to look for when a hull lacks an engine.
